Zero Rice with King Oyster Mushrooms & Avocado
This light, nutrient-dense meal combines zero-calorie rice with fried king oyster mushrooms, avocado, fresh vegetables, and a tangy lime twist. Perfect for a healthy meal without many carbohydrates—filling, flavorful, and packed with vitamins.

Ingredients (for 2 people)
• 150 g Zero Rice
• 300 ml water
• 2 g salt
• 150 g king oyster mushrooms, cut into pieces
• 1 avocado, cut into strips
• 1 yellow pepper, cut into strips
• 4 snack cucumbers, deseeded and quartered
• 40 g arugula
• 20 g olive oil
• 1 shallot, finely diced
• Juice of 1 lime
• A splash of vinegar (for the arugula)

Preparation
• Wash the Zero rice thoroughly in lukewarm water and then soak it in fresh water for about 3 hours.
• Wash vegetables thoroughly.
• Quarter the snack cucumbers lengthwise and remove the seeds with a spoon.
• Halve the avocado, remove the pit and carefully remove it from the skin using a tablespoon, then cut into strips.
• Cut the oyster mushrooms into bite-sized pieces.
• Finely dice the shallot and squeeze the lime.

1. Bring a pot of salted water to a boil. Add the drained zero rice and simmer over low heat until all the water is absorbed (about 12 minutes). Then let it cool.
2. Heat olive oil in a pan and sauté the king oyster mushrooms and shallots until crispy. Season with a little lime juice.
3. Marinate the arugula with a little vinegar and olive oil.
4. Arrange all prepared components (rice, vegetables, mushrooms, avocado, arugula) on a plate and garnish with additional lime juice, if desired.
