Black rice with roasted cashews and burrata

Ingredients (for 4 people)

• 250 g black rice

• 2 spring onions (white part diced, green part in strips)

• 2 × 20 g olive oil

• 1 chili pepper, finely chopped

• 2 garlic cloves, chopped

• 6 cherry tomatoes, halved

• 1 yellow pepper, cut into strips

• 1 pack of choi (packjoy), halved

• 1 bouillon cube (vegetable)

• 50g butter

• 50 g cashew nuts

• 20 g Parmesan, freshly grated

• 4 burrata balls (approx. 100 g each)

• Salt and pepper to taste

Preparation

• Wash rice thoroughly under running water until the water runs clear.
• Prepare the spring onions: finely dice the white part and cut the green part into strips.
• Finely chop the garlic and chili pepper.
• Halve the cherry tomatoes and cut the peppers into strips.
• Halve the pak choi lengthwise and wash thoroughly.

1. Heat 20g of olive oil in a saucepan. Sauté the black rice along with the diced white spring onions until translucent.

2. Deglaze with a little white wine (optional) and simmer. Then add about 250 ml of water and the bouillon cube. Simmer over low heat with the lid closed for about 25–30 minutes, until the rice is tender.

3. In the meantime, roast the cashew nuts in a preheated oven at 180°C until golden brown (approx. 8-10 minutes).

4. Heat 20g of olive oil in a large pan. Sauté the halved pak choi until lightly browned. Season with salt and pepper and set aside.

5. In the same pan, sauté the remaining ingredients (green spring onions, garlic, chili pepper, chili peppers, and cherry tomatoes) until crisp. The vegetables should remain crunchy.

6. Remove the cooked rice from the heat, stir in the butter and grated Parmesan cheese, and season with salt and pepper if desired.

7. To serve: Arrange a portion of rice on the plate, top with the vegetables, sprinkle with roasted cashews, and place a burrata ball on top.

 

Tip: A little fresh basil or lime zest adds extra freshness to the dish. Enjoy!
